* 10 slices thick bacon, cut in half
* 4 oz. cream cheese, softened
* 3 Tbsp. Italian-style bread crumbs
* 2 Tbsp. chopped pickled jalapenos
* 1/4 tsp. onion powder
* 1/4 tsp. garlic powder
* 2 Tbsp. lemon juice
* 1 lb. U.S. Farm-Raised Catfish fillets, cut into 1/2-inch strips (20 pieces)
* Salt for sprinkling
* Black pepper for sprinkling
* Light brown sugar for sprinkling
1. Preheat oven to 400°F. Place bacon on baking sheet and bake 10 to 12 minutes or until lightly cooked.
2. Meanwhile, in a medium bowl, combine cream cheese, bread crumbs, jalapenos, onion powder, garlic powder, and lemon juice; mix well.
3. Place a teaspoon of cream cheese mixture in center of each bacon piece. Sprinkle catfish lightly with salt and pepper and place over cream cheese mixture. Wrap bacon around fish and place on a clean baking sheet.
4. Bake 18 to 20 minutes or until fish flakes easily. Sprinkle with brown sugar and serve warm.
