* 2 Tbsp. peanut oil
* 6 garlic cloves, sliced
* 2 lbs. large shrimp, peeled and cleaned
* 1 c. dry roasted and salted peanuts
* 1 c. prepared Kung Pao sauce
* 2 c. chopped watermelon
1. Heat the oil in a large heavy sauté pan or wok over high heat. Sauté the garlic for 30 seconds.
2. Add shrimp; stir-fry until the shrimp begin to cook and plump up.
3. Add the peanuts and sauté another 30 sec. Reduce heat to low and add the sauce.
4. Simmer just until shrimp are cooked. Remove from heat. Stir in watermelon and serve immediately.
