            * 1 c. MinuteŽ Brown Rice, hot cooked
* 2 Tbsp. lite soy sauce
* 1/2 tsp. ground ginger
* 1 large red bell pepper, cut into strips
* 2 c. snow peas, halved
* 1 medium onion, halved, cut into 1/4-in. thick slices
* 1 pkg. (6-oz.) grilled chicken breast strips
            
            1. Prepare rice according to pkg. directions.
2. Combine soy sauce and ginger in large nonstick skillet. 
3. Add vegetables; toss to coat. Cook on medium-high heat 5 min. or until vegetables are crisp-tender, stirring occasionally. 
4. Add chicken; cook 3 min. or until heated through, stirring occasionally. Serve over rice.
Substitute: Substitute 1 tsp. minced fresh ginger root for the 1/2 tsp. ground ginger.
