Tomato and Goat Cheese Bruschetta

This is great for a light lunch or for supper with friends. Prep Time: 5 Min. Cook Time: 8 Min. What you need:

+ 8 thick slices cut from a partially baked ciabatta loaf
+ 2 Tbsp. olive oil + 5 oz. soft goat cheese + 1 small pack of cherry tomatoes + fresh basil leaves + salt and freshly ground black pepper What to do:
1. Preheat oven to 375°F
2. Arrange slices of bread on a baking sheet and drizzle with oil. 3. Bake in preheated oven until golden and crisp on the outside, allow to cool. 4. Spread with goat cheese and top with halved cherry tomatoes and fresh basil. 5. Sprinkle with salt and black pepper and serve. *Pesto or mozzarella cheese could be substituted for the goat cheese.
